Sonnet - Farmstead Goat Cheese
Our tomme-style, cave-aged beauty was awarded a winner's ribbon at the 2014 American Cheese Society competition! We hand-make Sonnet once or twice a week during the spring and summer and age it for several months here at the farm. We use exclusively milk from our own goats which ensures freshness and a seasonality to the flavor. Creamy, nutty, sharp, SMOOTH -- Sonnet has often been described to us as Manchego-like. We sell these by the lb for $32/lb.
**Please also note that Cheese is a living, breathing, thing. Do not expect it to last forever. It is best consumed within 2 weeks. It is fine to eat for far, far longer, but you will likely have to cut away the growing mold. Since it is a natural rind cheese, it will want to continue to grow mold all around it. Simply cut it away and enjoy the inside.
